This recipe books sets out make available to cooks in the United Kingdom some tasty dishes that are made in other continents. We hope you will cook each on them once or twice and then adapt them to your own taste. Most people in the world never use a recipe book but learn from their relatives and friends. Favourite dishes are handed down generation to generation. In order to bring these recipes to you, we have had to write them down, and so we have had to be precise where we should have preferred to be flexible. Since cooking is an art, we hope you will gain confidence as you use ingredients that may now be unfamiliar to you, and come to rely more on your sense of taste and smell than on this book. Certain principles guided us in the selection of recipes. We tried not to select those that were exploitative of the environment, for example, dishes demanding large quantities of beef. We have preferred to choose recipes where cheaper cuts of meat supplemented vegetable dishes or non-animal sources of protein. (Tomado de la introducción).
